Pineapple Apple Breakfast Cake
Ingredients
- 1/3 cup Brown Sugar
- 1/3 cup Granulated Sugar
- 2 Eggs room temperature
- 1/4 cup Coconut oil
- 1/4 cup Butter
- 3/4 cup milk
- 1 1/2 cups All-Purpose Flour tip: use cake flour for an extra tender cake
- 1 tsp Ground Cinnamon
- 1/2 tsp Salt
- 2 tsp Baking Powder
- 1 1/2 tsp Vanilla Extract
- 1 Apple peeled, cored, and grated
- 1/4-1/2 cup Pineapples chopped
Instructions
- Preheat your oven to 350 degrees.
- Peel, core and grate one apple. Prep and chop your pineapple. Set aside.
- In a large bowl, mix the flour, salt, cinnamon and baking powder. Set aside.
- In another bowl, whisk eggs, sugars, vanilla, oil and butter.
- Combine the wet ingredients with the dry ingredients, folding until right before it is fully combined.
- Add fruit and fold gently, just until fully combined and you don't see any more flour.
- Pour into a prepared 9X9 pan or 9 inch cake pan and bake for 20-25 minutes.
