If you are not a fan of zucchini and other summer squash, I urge you to give them another try with this simple and delicious recipe. Oh what wonders fresh garlic can do for a side dish and parmesan adds a nice, salty crunch to these sliced veggies. You can definitely use all zucchini or all yellow squash or even throw in some sliced eggplant. I haven’t tried it with eggplant, but I can only imagine it tasting great! The halved cherry tomatoes add a nice pop of tang that really elevates these vegetables to something wonderful so don’t leave those out if you can help it!
