No Knead Overnight Bread

Want fresh home baked bread without the fuss? I thought you might 🙂 This no knead overnight bread delivers! It literally requires no kneading and no special equipment so you can put your stand mixer back where it belongs. The only thing this recipe needs is 4 simple ingredients that you most likely already have in your pantry AND TIME. 12-18 hours to be exact and most of that time you will probably be dreaming of eating it.

The only ingredients are yeast, flour, salt and water. That’s it!

Super easy. You really can’t go wrong here. I would trust 4 of my 6 children to have success making this bread.

This recipe is designed for you to start it the day before. No need to mix and then rise and then shape and rise again, timing every step along the way. Simply mix, which takes all of 5 minutes (if that), cover and set aside.

You can sleep in, too! You don’t have to worry about setting an alarm to wake up to continue this recipe. Hopefully you get a good 8 hours of sleep in each night. This recipe has a slow rise for at least 12 hours, longer is perfectly fine! The slow rise gives the breads it’s wonderful flavor and this method will yield the most amazing crust.

Everyone will love it. Even my husband raved about this bread and I am pretty sure the words “best bread ever” were used.

Things to consider

You will bake this recipe in a Dutch Oven. It’s basically a thick walled pot with a lid. You can find them made of cast iron or even ceramic. Mine is ceramic. Since it has such thick walls, they are suited to allow you to cook longer and at high temperatures in the oven.

You can either use all-purpose flour or bread flour or a mix of both. However, results are fantastic with each option and I don’t notice a huge difference.

I have never made this recipe outside of a Dutch Oven, however I imagine you can. The crust will probably not be as thick and as crisp and you will want to adjust the temperature and cooking time.

No Knead Overnight Bread

4 simple ingredients baked to perfection

Servings 1 loaf

Ingredients

  • 3 cups all-purpose flour
  • 2 tsp salt scant
  • 1/2 tsp active dry yeast
  • 1 1/2 cups water room temperature`

Instructions

  1. In a large bowl mix the flour, salt and yeast.

  2. Pour in the water and combine with a spatula, just until the flour is incorpotated.

  3. Cover with a splastic wrap and kitchen towel and allow to rise for 12-18 hours and up to 24.

  4. Preheat oven and dutch oven to 450 degrees, including lid.

  5. Flour your hands and your dough and shape into a ball. Place it into your pot. You can put a piece of parchment paper on the bottom if you are worried about sticking.

  6. Bake for 30 minutes with the lid on. Remove the lid and bake for another 20 minutes with the removed until a nice golden brown.

  7. Remove the bread from the pot and allow to cool completely on a wire rack.

  8. Slice and enjoy!
