I love birthdays and being a mom of 6, and it seems like every time I look up there is a birthday right around the corner ( because there is!). I generally go for a simple, 2-layer white or yellow cake with a vanilla or chocolate buttercream frosting, but for my son’s 6th birthday, I wanted to try something different. Birthday Cake Cookie Bars are definitely different and they are oh so delicious! The texture is right between the best sugar cookie you have ever had and the fluffiest white cake. Try this for your next birthday celebration and you will add this to your dessert rotation for sure.
This recipe makes 9 large cookie bars, which is perfect for my family of 8. You will find these Birthday Cake Cookie Bars to be very filling and you can totally customize them. I am not a huge fan of sprinkles in my batter, but if you are a funfetti kind of person, by all means — go for it! I added just a few to mine. You could also switch up the frosting if you like. Chocolate would be a great option!
How to make Birthday Cake Cookie Bars
Another thing I love about these cookie bars is they are super easy to make and take almost no time at all. The last thing I want to do on the day of the party is spend half of it baking. Simply cream together your butter and sugar, add eggs, heavy cream and vanilla and then mix in your flour and baking powder. That’s it! Of course, you can go one step further and fold in some sprinkles.
You can also double this recipe. I used a 9 X 9 baking pan, but you can double the recipe to fit a 9 X 13 if you are feeding a crowd.

Birthday Cake Cookie Bars
A great combination of the best sugar cookie you have ever had and the fluffiest white cake.
Ingredients
- 1 stick butter softened
- 1 cup sugar
- 1 egg
- 2 TBSP heavy cream
- 1 tsp vanilla
- 2 cups all-purpose flour
- 1 tsp baking powder
Frosting
- 1 stick butter softened
- 1 1/4 cup powdered sugar sifted
- 2 TBSP heavy cream
- 1 tsp vanilla
- pinch of salt
- sprinkles
Instructions

Preheat oven to 350 degrees.

Line a 9X9 baking pan with parchment paper. This will help you remove it from the pan and frost it later.

Cream together butter and sugar for about 3 minutes until fluffy. Beat in your egg, vanilla and heavy cream until combined.

Mix in your flour, baking powder and salt on medium just until combined. If adding sprinkles to the batter, you can fold them in at this point.

Spread your batter in the baking pan and bake for 20 minutes or until set, and the edges are lightly golden. Allow to cool fully before removing from the pan and frosting.
Frosting

Cream butter for about 2 minutes and then add powdered sugar, heavy cream, vanilla and a pinch of salt. Beat on high until light and fluffy. This should take about 3 minutes. Remove the bars from the pan, frost, sprinkle and slice into 9 bars. Enjoy!
