These jam oat bars are a #1 snack choice in my home and disappear just as fast as it takes to cut them into squares. Taking that classic childhood flavor pairing and stepping it up in a more healthy way with Sun Butter, these are sure to please children and adults alike. Great also as dessert or even breakfast, you can put any kind of jam or fruit preserve in the middle that you like. My favorites are grape, strawberry and raspberry. What’s yours?
Sunbutter and Jam Oat Bars
Ingredients
- 1/2 cup packed light brown sugar
- 1 cup all-purpose flour
- 1/4 teaspoon baking soda
- 1/8 teaspoon salt
- 1 cup rolled oats
- 6 TBS butter softened
- 2 TBS SunButter
- 3/4 cup jam of your choice. I am using strawberry today
Instructions

Preheat oven to 350 degrees F. Line an 8 inch square pan with foil and oil it.

Combine brown sugar, flour, baking soda, salt, and rolled oats.

Mix in the butters using a pastry blender or a fork to form a crumbly mixture.

Press 2 cups of the mixture into the bottom of the prepared pan.

Spread the jam leaving about a 1/4 inch of the edge. Sprinkle the remaining crumb mixture over the top, and lightly press it into the jam.

Bake for 35 to 40 minutes in preheated oven, or until lightly browned. Allow to cool before cutting into bars. ENJOY!
