What Are Cookie Crackers?

Cookie crackers are thin, crispy treats that combine the sweetness of a cookie with the slight crunch of a cracker. Think of them as a lighter, snackable version of your favorite cookie—perfect for lunchboxes, after-school snacks, or even a quick tea-time treat. They are made with oat-flour so they have a ton of flavor and the cinnamon gives them a nice bite.

Tips for the Best Cookie Crackers

  • You can roll the dough very thin for maximum crunch
  • For a more chewy cookie cracker, roll thicker and don’t over bake

Cookie Crackers

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup of oat flour
  • 1/4 cup powdered sugar
  • 1/3 cup brown sugar
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 cup butter cold and cubed
  • 1 TBSP Sunflower Seed Butter
  • 2 –3 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F
  2. In the bowl of your food processor, mix flours, sugars, cinnamon, baking powder and salt.
  3. Add butters, vanilla and honey and mix until crumbly.
  4. Pulse in milk until a dough forms.
  5. Roll the dough out thinner for crispier crackers or thicker for chewy cookies.
  6. Cut into small circles, squares or fun shapes.
  7. Place on a baking sheet fairly close. They won’t spread much.
  8. Bake for 7-8 minutes or a minute or two longer if you want them crunchy.
  9. Let cool completely—enjoy!
