These Chocolate Chip Cookie Bars are the perfect balance of everything you love about a chocolate chip cookie. A soft and chewy center and slightly crispy edges. It all comes together without a mixer, without scooping and they’re ready in about half the time.
You can really use whatever add in you like. Today, I am using chocolate chunks because this is what I have on hand. However, I have tried this recipe with chocolate chips, white chocolate chips and even butterscotch chips. I am sure that almost any add-in you prefer would work. For instance, Toffee bits sound like a fantastic idea!
These Chocolate Chip Cookie Bars come together super fast. First, cream your egg, sugar, melted butter and vanilla until creamy and lighter in color. Then sift in your dry ingredients just until combined. Spread the mixture in your prepared pan and sprinkle with your chips (or chunks). You can totally fold in some chocolate chips if you like. I love the balance of being able to enjoy the amazing texture of this bar and the chocolate scattered on top.
Finally, bake at 350 for 20 minutes and you have the perfect treat that is quicker and easier than cookies, but satisfies that chocolate chip cookie craving.
Chocolate Chip Cookie Bar Tips
This recipe can be doubled: Double this recipe if you have a crowd or you want to store some bars in your freezer for later. You can use a 9×13 pan.
Store for 2-3 days at room temperature: I like to store these in my cake keeper or an air tight container for 2-3 days. although they rarely last that long. ?
This recipe can be made with plenty of add-ins: Some ideas are white chocolate chips, butterscotch chips, toffee bits, M&Ms or even a combination! Chocolate chips on top with toffee bits folded in sounds amazing.

Chocolate Chip Cookie Bars
Ingredients
- 1/2 cup butter melted
- 1 cup brown sugar packed
- 1 egg
- 1 tsp vanilla
- 1 cup flour sifted
- 1/2 tsp baking powder
- 1/8 tsp baking soda
- 1/2 tsp salt
- up to 3/4 cup chocolate chips or other add-in
Instructions

Preheat oven to 350 and melt butter. Set aside to cool a bit.

In a large bowl, add sugar, egg, vanilla and melted butter. Stir with a spoon vigorously until the batter is creamy and lighter in color.

Sift in your dry ingredients and fold in until combined. You can also fold in your add-in at this point if you like.

Pour batter into a prepared 9×9 pan. I am using parchment paper, but you can also butter your pan. Spinkle with your chips and bake for 20 minutes or until cookie is set and edges are lightly golden. Enjoy!
