I love it when I know a recipe is going to be great before I even make it. That is how I felt when I decided to make cauliflower tacos. Because why not? I love cauliflower for so many reasons and one of those reasons is that you can pretty much make it taste like whatever you want, including taco filling. Cauliflower tacos are so easy and so delicious. It’s possibly the healthiest taco you will ever have and it might even be the tastiest.
Of course, a good taco starts with a homemade shell.
Because when you can make them at home, why not?
Ok. Can we talk about the filling now?
Yes. It’s cauliflower. I am using my grater attachment in my food processor because it’s just too easy that way, but in the future I would like to try it with tiny florets for a more ‘meaty’ texture. This way is great though!
I like to sauté my onions, peppers and garlic first.
After your onions and peppers soften, add your garlic and cook for another minute or two. Set aside while you work on your cauliflower.
Sautee your cauliflower in a couple tablespoons of coconut oil and then add your spices.
Then add your your sautéed onions, peppers and garlic.
This filling is so good and surprisingly hearty. For someone like my husband who loves his fish tacos, he raved about these tacos and asked if we had more. That’s when I know a recipe is a success.
Of course, this filling is great on it’s own as well. Try it in a burrito even.
Cauliflower Tacos
The healthiest and possibly the most delicious taco you will ever eat!
Ingredients
- coconut oil for sautéing
- 1 large head of cauliflower
- 1 onion
- 1 bell pepper
- 3 cloves garlic
- 1 tablespoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1 1/2 teaspoons ground cumin
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions

Saute onions and peppers until soft, 5-10 minutes. Add garlic and cook for another 1-2 minutes.

Wash and then shred your cauliflower. If you don't have a food processor with a grater attachment, you can use a box grater or just break it down with a knife.

Saute your cauliflower in a bit of coconut oil for about 5 minutes and then add your spices and veggies. Cooking for another 5-10 minutes until cauliflower is soft. Enjoy in homemade taco shells!
