Cauliflower Pizza with a Butternut Squash Sauce

This Cauliflower Pizza with Butternut Squash Sauce is so good that you will definitely be making this again once you try it. This was one of those recipes that I just knew it would be good before I even tasted it. So good, I wanted to make it again the next day. I love butternut squash. Sweet, savory, either way is fine with me. I don’t remember having a dish with butternut squash that I didn’t love. This recipe was no exception. Even my husband who doesn’t care for butternut squash, but eats it when I serve it said “This is pretty good, B”. Ahhh…Success!

Normally, when I make a recipe that calls for a cauliflower crust, such as Cauliflower Cheesy ‘Breadsticks’, I do the whole ‘wring the water out of the cauliflower with a tea towel’ method. This way works great, but it’s so…not for me. A busy mom, loves to cook, but doesn’t always have time to do all of the ‘extra’ steps.  Instead of steaming the cauliflower, allowing it to cool and then squeezing the life out of it with a towel, I cook the moisture out of it in the skillet. This way is so much easier and a lot less hands on which I can appreciate in most recipes.

The first thing you will want to do is ‘rice’ the cauliflower. You can do this with a box grater or if you really want to be efficient, use the grater attachment with your food processor.

After cooking the moisture from the cauliflower, the recipe comes together pretty quickly and this part is a little more hands on. Just like making a traditional crust.

Instead of ‘rolling out’ your crust, you are simple going to use your hands to shape into a circle. Or a square or whatever shape you want your crust. Get creative! This crust is extremely flexible and is much easier to shape than traditional pizza dough. I think I may even try a heart when I make this for date night.

After shaping the dough you are going to bake it before topping.  I bake mine for about 10 minutes in a 400 degree oven just until it starts to brown.

Allow your crust to cool slightly and top it with your butternut squash puree and cheese.

Turn your oven up slightly to 425 and bake for another 6-8 minutes or until cheese is melted and slight browned.

Cauliflower Pizza with a Butternut Squash Sauce

Ingredients

For the crust

  • 1 head cauliflower
  • 1 egg
  • 1/4 cup parmesan cheese
  • 1/4 cup white cheddar or mozzarella cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • salt and pepper to taste

For the sauce

  • 1 cup pureed butternut squash
  • 1 tablespoon parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • salt and pepper to taste

Toppings

  • Whatever you like.

Instructions

  1. Wash and dry your head of cauliflower.

  2. Using the grater attachment, grate the entire head and pour into a large lightly oiled skillet over medium heat. Cook for about 10 minutes, stirring frequently until the moisture is gone and the cauliflower is softened. 

  3. Allow the cooked cauliflower to cool slightly and then mix in the egg, cheese and seasonings. Pour onto parchment paper that as been oiled with coconut oil and shape. 

  4. Bake at 400 degrees for about 10 minutes or until the crust starts to brown. Allow to cool slightly. 

  5. While crust is cooling, mix squash puree with seasonings and parmesan cheese.

  6. Raise oven temperature to 425. Top with sauce and cheese and bake for another 6-8 or minutes or until cheese is melted and browned. Enjoy!
