Cauliflower Pea Salad

Caulilflower Pea Salad

A simple and elegant salad made with cauliflower, peas and eggs.

Ingredients

  • 1 head cauliflower trimmed and cut into bite-size florets
  • 3/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • pepper to taste
  • 3 hard boiled eggs chopped
  • 3/4 cup frozen green peas thawed
  • 3 tablespoons of prepared or homemade relish

Instructions

  1. Steam or boil cauliflower or 7-10 minutes or until fork tender. Drain and cool slightly.
  2. (Optional) Rinse and steam your peas for 5 minutes.
  3. In a large bowl whisk together the mayonnaise, mustard, salt, and pepper. Add in the cauliflower, eggs, onion, peas and relish. Combine until well coated.
  4. Cover and refrigerate for at least 2 hours. The longer the cauliflower salad chills, the better the flavor.

Recipe Notes

Steaming your peas are optional, but I like the flavor of them steamed better.

Feel free to customize this salad with ingredients like grated cheese or even onions.
