Butternut Squash Muffins

Ingredients

  • 1 cup butternut squash puree
  • 2 eggs
  • 1/4 cup coconut oil
  • 1/4 cup butter 4 TBS
  • 1/4 cup water
  • 3/4 cup white sugar
  • 1/2 cup brown sugar
  • 1 3/4 cups all-purpose flour
  • 1 teaspoons baking soda
  • 1/2 teaspoon kosher salt
  • 1 TBS pumpkin Pie Spice

Instructions

  1. Preheat oven to 350°F. Prepare muffin pan.
  2. In a large bowl, mix together the butternut squash puree, eggs, oil, butter, water and sugars until combined.
  3. In a separate bowl, whisk together the flour, baking soda, salt and spices.
  4. Stir the dry ingredients into the butternut squash mixture just until combined. Try not over mix.
  5. Scoop the batter into your prepared muffin pan.
  6. Bake for 20-25 minutes. Enjoy!

Recipe Notes

You can use all oil or all butter for this recipe. 

If you don't have pumpkin pie spice you can use 2 teaspoons ground cinnamon, 1/2 teaspoon ground nutmeg and 1/2 teaspoon ground ginger.
