Preheat oven to 350 degrees. Line the bottom of one 9" x 5" loaf pan with parchment paper and set aside.
In a large mixing bowl, stir together the mashed bananas, oil, sugar, eggs, and sunflower butter until smooth. You can use a mixer as well, but a spoon or spatula work just fine here.
Sift in the flour, baking powder, baking soda, and salt. Gradually fold and stir the dry ingredients into the wet ingredients until it’s just half mixed. Stir in 3/4 each of the chocolate chips, reserving 1/4 cup for the topping.
Pour the batter into the loaf pan. Top with the reserved chocolate chips.
Bake at 350 degrees for 50-55 minutes or until a toothpick inserted comes out clean.
Remove the bread from the oven and let cool some before removing it from the loaf pan and completely before slicing. Enjoy!
